Beachaven Collaboration!
When you have two alcohol businesses a stones throw away from each other, it’s only a matter of time before ideas start getting tossed back and forth. While on a day to day basis Beachaven Winery works with fruits and we work with grains, there are many similarities between the two of us. We both have the same goal in mind of converting sugar (either from fruit or grain) into alcohol.
As we learned more and more about each other’s processes, a light bulb went off in mid-conversation one day. Brandy! Brandy is simply distilled wine that is required by law to be aged for at least 2 years in a barrel. Beachaven had the wine, we have the still, and we decided to age the brandy in a used wine barrel. The wine we used was an already phenomenal tasting Chardonnay, and when we distilled through our copper pot still, the spirit that flowed off was very bright, aromatic, and rich tasting spirit. It could hold its own as a stand-alone unaged immature brandy, but the two-year rest we’re going to give it in the barrel is going to really balance it out.
This particular barrel is slightly larger than our typical Bourbon and TN Whiskey barrels. It’s a 60 gallon vs. our typical 53 gallon. Come by for a tour where we’ve got the barrel on display!
